Classic Bolognese

Slow-simmered beef and pork ragù.

Ingredients

  • 500 g ground beef
  • 200 g ground pork
  • 1 tbsp olive oil
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 100 g carrots finely diced
  • 100 g celery finely diced
  • 1 can crushed tomatoes
  • 2 tbsp tomato paste
  • 150 ml whole milk
  • 1 pinch salt
  • 1 pinch black pepper
  • 400 g spaghetti
  • 50 g parmesan grated

Steps

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Brown the beef and pork, breaking up clumps, until no pink remains.
  3. Add onion, carrots, and celery; cook 5 minutes until softened.
  4. Add garlic and cook until fragrant.

    Don't let it burn.

  5. Stir in crushed tomatoes and tomato paste; season with salt and pepper.
  6. Reduce heat to low, cover, and simmer 45 minutes, stirring occasionally.

    The ragù should be thick enough to coat a spoon.

  7. Add the milk and simmer 5 more minutes to mellow the acidity.
  8. Cook the spaghetti in salted water until al dente.
  9. Toss the pasta with the ragù, finishing with grated parmesan.

Notes

Freezes well for up to 3 months. Variations: add mushrooms or a splash of red wine in step 5.
